Best Low Calorie Chocolate Mint Desserts

Low Calorie Mint chocolate cake (58 cals)

This amazing recipe is the perfect way to enjoy a whole, entire cake to yourself guilt free, at under 250 calories! The combination of chocolate and mint is so moreish and beautifully fragrant and being on a weight loss journey shouldn't prevent you from indulging in your favourite desserts. It's so easy to make too and perfect if you are a fan of chocolate desserts, that just so happen to be ultra fluffy, moist, decadent and super satisfying (you can literally eat the whole darn thing in one go and still lose weight). This low calorie mint chocolate sponge cake is everything, plus it contains just 60 calories per slice or 250 calories for the ENTIRE cake as well as the frosting! Losing weight never tasted this good before! 

A super simple recipe that comes together in just one bowl, it only takes under 30 mins to make! This cake is super moist, soft and fluffy and deliciously rich and chocolatey throughout.

 INGREDIENTS


🤍 1 Egg – This recipe calls for just 1 egg. The egg provides the structure for this low calorie lemon cake.

🤍 50g Stevia or granulated sweetener – Any granulated sweetener will work for this recipe. Stevia is an amazing option, as it is the closest in taste to sugar.

🤍 50g Full-fat yogurt – This recipe contains very little fat and therefore calls for full-fat yogurt. This adds moisture to the cake giving it that classic soft and fluffy texture. You could use low-fat yogurt in a pinch but the cake may be a little dry.

🤍 25g Plain/all-purpose flour – This recipe calls for plain or all-purpose flour. For a gluten-free alternative, you can use gluten-free flour or oat flour.

🤍 1 tsp Baking powder – Baking powder helps the cake rise.

🤍 One or two drops mint essence 

🤍 15g unsweetened cocoa powder

FOR THE FROSTING OR ICING

🤍 50g of Full-fat yoghurt 

🤍 1 tbsp unsweetened cocoa powder

🤍 2 tbsp of 0 calorie icing sugar – 0 calorie icing sugar keeps this recipe sugar-free. If you don’t have any 0 calorie icing sugar to hand, you can make your own by blitzing granulated sweetener in a food processor! You can also opt for regular icing sugar but it will add a few extra calories. 

🤍 1-2 drops of mint essence 

HOW TO MAKE LOW CALORIE AFTER EIGHT CAKE

1. First, go ahead and pre-heat oven to 180°C (356°F). Let's make the frosting first, by mixing together the yogurt, cocoa powder, mint essence and 0 calorie icing sugar. Then, set aside in the fridge to chill.

2. Using an electric hand whisk, beat the egg until fluffy. Whisk in the stevia and whisk again until light and fluffy. Mix in the yogurt and cocoa powder. Fold in the dry ingredients and mint extract, mix until well combined. Transfer the batter to a 5-inch cake pan and bake for 20 minutes or until a toothpick or clean knife inserted into the center comes out clean.

3. Allow the cake to cool before frosting. Cut into 4 slices, serve and enjoy!

TOP TIPS

🤍 Don’t over mix the batter – When folding in the dry ingredients, do so gently. The thick egg is what gives this cake volume so you don’t want to deflate it! Fold the ingredients in until the batter is well combined but try not to over do it.

🤍 Chill the frosting – The frosting is already quite thick but to really give it that thick, creamy ganache feel, chill it in the fridge. I like to make the frosting first and set it in the fridge whilst the cake bakes and cools.

🤍 Allow the cake to cool – If you add the frosting to the cake before it cools, it will melt. Make sure to allow the cake to cool completely before adding the frosting.


Low calorie After Eight mousse (150 cals) 

You would never know this indulgent mint chocolate dessert is just a fraction of the calories of a regular chocolate mousse - it's the perfect way to hit your chocolate and mint cravings! It is only 150 calories for the entire thing, which makes it the perfect guilt free way to indulge your sweet tooth. Super light, airy and indulgent, it is refrigerated overnight to give the perfect light, smooth and moussey texture, packed with deep decadent chocolate flavour. 

Ingredients

🤍 1 small pasteurised egg separated – for our fluffy mousse texture and to bind everything together

🤍 4 tbsp Stevia – you could switch this out for any granulated sweetener you prefer

🤍 150g Low-fat yogurt 

🤍 2 tbsp Unsweetened Cocoa powder

🤍 1-2 drops of mint essence 

🤍 15g Dark cooking chocolate – any chocolate that is designed for baking/easy to melt will do!

How To Make Low Calorie Chocolate Mousse

1. Take the separated pasteurised egg - the egg whites and the egg yolk apart from each other - and set the egg whites aside.

2. Grab a medium bowl and whisk the egg yolk, then set aside.

3. Next we're going to pop the cooking chocolate into a small microwaveable bowl or dish and pop in the microwave for about 30-40 seconds, mixing every ten seconds or so. Once melted, allow it to sit and come to room temperature, while we prepare the other components of the recipe!

3. Next we're going to mix the yogurt and cocoa powder into the egg yolk and whisk until smooth. Then stir and whisk in 1 tbsp of sweetener into the yolk mixture.

4. Now take the melted chocolate and fold it into the yogurt mixture until fully combined.

5. Now we're going to whip the egg whites to perfection, so the mousse is nice and thick and creamy! Grab another medium bowl and whisk the egg white and remaining Stevia together, taking your time, until stiff peaks form.

6. We're now going to carefully, bit by bit, pour the egg white mixture into the chocolate yogurt mixture and stir until fully combined. Fold in the remaining egg white mixture slowly and carefully, until fully incorporated.

7. Almost there! Now we're going to gently pour the mousse into two bowls or ramekins and allow them to set in the fridge for at least 3 hours. Leave them to set overnight for the best results! 

Top Tips

Take your time - for the best results, take your time when whipping the egg whites and take care not to rush the process, for the best EVER mousse texture! This will result in a thick, creamy and silky mousse texture that is super rich and chocolatey. The mint takes it to the next level! 

You can store this chocolate mousse in the fridge or freezer - it will last for up to 4 days in the refrigerator or will last for up to 2 months in the freezer!

🤍 125g 3% fat cream cheese – it provides the perfect firm base for the brownie dough bites and is still super low in calories!

🤍 65g 0 calorie icing sugar 

🤍 20g Dark chocolate chips – you can swap these out for any chocolate - you can also use vegan chocolate chips for a vegan alternative or sugar free chocolate to make this recipe sugar free! 

How To Make Low Calorie Brownie Truffles

In a medium bowl, combine the cream cheese, cocoa powder and icing sugar until smooth and lump-free. The batter should be very thick. Fold in the chocolate chips and form 9 balls from the batter. Either enjoy the truffles straight away or set them on a flat surface prepared with parchment paper and refrigerate. The truffles with firm up in about an hour. To speed up the process, freeze them for 20 minutes. 


Low calorie After Eight Chocolate Mint muffins (77 calories each) 

These After Eight inspired moreish chocolate muffins are perfect for the mint chocolate chip desserts lover when eating on a calorie deficit! They are so indulgent and perfect to satisfy every chocolate craving, plus the small batch serving means you don't need to worry about eating more than one (they are so good!), plus they take under 20 mins to make. These are my favourite way to put chocolate and mint back on the menu when losing weight. This recipe makes 6 muffins altogether. Did I mention these are less than 80 calories each!


INGREDIENTS

🤍 70g All-purpose flour – this can also be switched out for some gluten free flour or oat flour.

🤍 16g Unsweetened cocoa powder

🤍 30g Stevia – you could switch this out for any granulated sweetener you prefer

🤍 1 tsp Baking powder – helps them to rise and gives a lovely soft, fluffy texture 

🤍 One egg 

🤍 50g Low-fat yogurt

🤍 1-2 drops of mint essence 

🤍 30ml Unsweetened almond milk – this is perfect for our recipe as it is super low in calories, although you can substitute for any milk of your choice (the calories will change slightly)

🤍 Dark chocolate chips or chunks – or any chocolate will do! Using sugar-free chocolate chips will make this recipe completely added sugar-free. 


HOW TO MAKE LOW CALORIE CHOCOLATE MINT CHOCOLATE MUFFINS


1. To start, pre-heat oven to 180°C (356°F). We're first going to grab a medium bowl, whisk together the egg and stevia until light and fluffy.

2. Stir in the milk, yogurt and extract until nicely combined, and then fold in the flour, cocoa powder and baking powder until well combined. Then gentle stir in the chocolate chips or chunks.

3. Now we're going to split the batter evenly between 6 lined muffin molds or cases. Pop them in the oven and bake for around 10-15 mins, or until a toothpick through the center comes out clean.

4. Allow the muffins to cool and then enjoy!


TOP TIPS

🤍 Take care to not over mix the batter – try to mix the batter just so that the ingredients are combined and for no longer, to give the cakes the best texture.

🤍 These cupcakes are one of the easiest tastiest low calorie meal prep dessert ideas! To make them last all week long - store them in an airtight container in the fridge for up to 7 days.
